Like it. What are you going to do for fermentation temp control?? We are hitting consistent 60's now here in Oregon.

I added an extension to a mini fridge using styrofoam insulation boards. I can easy maintain 50F with a ranco temp controller. I plan on pitching at 45-48 letting it free rise to 50 and hold for 10 days or until fermentation slows. I will then raise to 60F for diacetyl rest and to aid in a complete fermentation and dry hop at that time. I may go a little higher (62ish) to avoid the negatives of dry hopping cold. I have not used mosaic before and wanted to try it paired up with some other hops rather than have a keg of single hop beer. Hoping somebody with experience with the hop would weigh in.

with all those hops, you want some sulfate in your water.
Oh, and 7 grams of Citra dry hop isn't going to do much.
You might as well just throw that little bit in at flameout with the rest of the Citra.

If you really want the hops to shine through you may want to consider splitting the Maris otter base malt 50/50 with good old plain American 2-row. Otherwise looks delicious...

I sure hope you're going to use more than 1 pack of yeast and do a hefty starter. There aren't enough hops to cover up a poorly fermented beer.

Thanks for the suggestions! I shifted the pilsner malt to 18% and the maris otter 70%. the mineral additions 2 grams gypsum, 1 gram CaCl, to mash, 1 grams gypsum, 1 gram CaCl to the boil. I just collected a big slurry from a pilsner last night. Probably going to shift the citra from the dry to the flameout as well.

I love mosaic. Blueberries come through as the main fruit for me. I use it in my DIPA and it's a HUGE favorite, even among the "I don't like bitter beers/IPA" crowd. And this is in a 9% ABV, 100+ IBU beer!
