grassy flavor from dry hops

Dry hopped 1 better bottle with simcoe (1 oz) and amarillo (1.25 oz) and the other with zythos, centennial and st. goldings .75 oz each. dry hopped with temp control at 64 degrees. Both were off the yeast and left in secondary for 4 days. Pellet hops were used. Flowers would have been better i guess but any hypothesis on the grassy notes?

So you left the dry hops at 64 F for 4 days in secondary, right? Both of your overall dry hop additions were quite minimal and 4 days is really not a LONG time. What was your hop schedule like during the boil? Did you make any water adjustments for this brew? Four days does not seem like it should produce a grassy flavor although I have never used Zythos hops before either. Have you let the beer age a bit to see if the grassy flavors have faded?

Grassiness due to dry hopping will drop off after you package it.
It usually takes a week or so.

Zythos is that hop blend, right?

that's been my experience as well. after a few weeks in the kegs the grassiness drops off considerably.

Water adjustments were gypsum to help with high ph and low calcium in my water. I added 4 teaspoons for 12 gal. batch. Zythos is the hop blend and is a nice citrusy blend with a touch of lemon. Only in the keg for 1 week now so waiting is whay I'll do. How long are you all finding your ipa's need to hang in the keg until optimum flavor?

That is a fair amount of vegetal matter that you added. Was the beer kegged or bottled after dry-hopping? I'm just wondering if there was perhaps particulate hop debris still in suspension when you tasted it?

After dry hopping cooled to 38 for 3 days then kegged. Waited for 3 days for it to carb. I also add gelatin for clarity. Tasted after 5 days. It's still a little green i know but seeing that the grassy flavor might drop out I think it will be a good ipa.
