So far I've been only using a primary. If I want to clear up my beers, do I need to use a secondary if using gelatin? Then just rack to bottling bucket and use priming sugar as normal? I don't keg, only bottles at this point.

Currently use Whirlflock in the boil as my only fining

You can use it in primary, secondary, or add it to the bottling bucket. If you are using it in primary or secondary you do need to chill the the fermentor to get it to clear. So no need to use a secondary if you don't want to. If you use it while bottling then it will clear after a few days in the fridge, after bottle conditioning that is.
