Conditioning Temp - Does It Matter

Fri Oct 27, 2006 4:35 pm

I'll be bottling my 1st lager this weekend. I'm curious, if I'm bottle conditioning does it matter what temp. I condition at? Should I condition at fermentation temp or is room temperature ok?

Since you're carbonating naturally you need to have the temp high enough for the yeast to eat up the sugars. I always keep my bottles as close to 70f as possible for about 2 weeks while they carbonate. I try one at that point to see if it's coming along. If so, I'll move to the fridge, the cooler temps will help to dissolve the CO2 into solution.

Good luck!
