I noticed your spinning your whirlpool counter clockwise, does the direction of the whirpool matter?

There may be some small difference based on how the chiller is coiled, but it shouldn't make enough difference to matter. What is most important is the angle which the output strikes the kettle side. Not too steep an angle or it won't whirlpool.
