to give you a sense of scale, 7Bbl is pretty darn small. I run a 24hl/20Bbl (i think?) brewhouse, and we will frequently run 4 brews into one fermentor.
Another local brewery has a 60hl/53Bbl brewhouse and they do double brews into fermentors. Another even bigger local has a 100hl brewhouse etc etc....
7Bbbl is tiny. Workable and fun, but tiny in the grand scheme of things. I think on a session show jeremy fromLAgunitas said he does a 300+Bbl batch size?
