I harvest before I add the gelatin. I put the gelatin directly in the keg & rack on top of it to evenly distribute it. Harvest out of the fermentation vessel either prior to racking (with a conical) or after racking (with a carboy/bucket). I'm not sure if it would work with bottling/natural carbonation, but if I were going to try I'd do the same thing, only adding the gelatin to the bottling bucket. I don't think it would work because you should store it cold after adding the gelatin & it could mess up the natural carbonation. It's just beer. You could give it a try if you wanted to.

Yes. But make a starter rather than directly repitching. Gelatin doesnt reproduce.
