Duvel clone

Planning a duvel clone for a surprise bday present for my father in law. I got jz's recipe and I am wondering if the sugar addition should be in the kettle or in the fermentor? I am worried about yeast shock by adding it to the boil. Thoughts?

Feed it into the primary at high krausen.
The yeast will love it and go nuts and you'll get the driest finished product that way.

And my og will not be affected by adding the sugar to the fermentor? I guess it doesn't matter when it gets added.

Not as long as it's all accounted for in the recipe. Your reading when pitching will be low, but you can calculate how many points the sugar additions account for.

That's what I thought so to calc my og after boil it needs to deduct the sugar addition.

The easiest way, if you're using software, is to delete the sugar addition from the recipe, write down the OG, put it back in & save the adjusted OG as a note. I always print out a copy of my recipes for brewday & use them to write my notes on. After brewday it goes in a 3 ring binder & I copy my hand written notes into the software's brewlog. In my case I'd just put the adjusted OG in parenthesis after the printed OG.

Don't forget to figure your contribution from IBU's as well when planning your brewday. When doing a post boil sugar addition keep in mind that those gravity points will not be utilized in the boil. So you want to figure your hop utilization and IBU's for only the gravity points gained in the kettle during the boil. The remaining sugars added later will completely ferment out and not leave behind any malt sweetness to balance up against the extra hops you may have added for your original full recipe gravity.
