Hop profile for a schneider Hopfen-weisse clone

Morning chaps

I'm doing a schneider hopfen-weisse clone this Saturday and was going to follow the Brooklyn hop profile of Amarillo/Palisade.
But as I have (and cannot get any) amarillo or palisade I'm thinking of going cascade for the amarillo sub but not sure what to go for the other sub. I was thinking of Simcoe (for no other reason than I quite like them and they impart a citrusyness).

Hop in the store include:

Apollo
Simcoe
Cascade
Columbus
Citra
Crystal
Mt hood
Perle (though quite old)
Bobek (again quite old)
N Brewer
Centennial (old)
Cluster
Hallertau
Saaz (quite old)
Challenger (Maybe some)
Little magnum, progress (v little)

Any thoughts guys?

Nothing you listed jumps out as a good Palisade sub... looks like you might just be making your own hop profile. This is what I use as a quick reference for checking for suitable subs... http://hopunion.com/17_HopVarieties.cfm?p3=open

Thought that myself spider.
Ive had a look at the brooklyn webpage and they have this
'The beer has a full orange color and the aromatics pair the banana and clove notes from the Schneider yeast with the mango and citrus qualities of the hops'

Mango and citrus.
Citrus from the Simcoe (not too much, dont want it overpowering) and I was thinking of a small dryhop(or very late hop) addition of Citra for the mango (http://www.brew-dudes.com/citra-hops/557)

Either way it'll get drunk.

I downloaded something similar this morning but it was the American hop Manual, some great info.

I'm interested in your recipe and the yeast you are going to use. I have not had the Schneider Hopfen-Weisse but did have a draft Schneider Weisse last spring and it was the best hefe I have ever had. The yeast flavors were amazing.

I tried getting the hopfenweisse yeast from the bottle but it didnt take so i'm going to use WLP300 instead. I'd still like to try getting some schneider yeast but there arent that many good beer shop over here in N Ireland sadly.
As for the recipe ive stuck it up on brewology while hopville is down.

Thanks for the recipe. I'd like to try and grow up some Schneider yeast, if I could find a bottle. However, I would like to try blending D-47 yeast and WLP300 for my next Hefeweizen. I'm hoping the D-47 would create some moderate to low tropical and citrus fruit flavors.

Aaron, I brought some Schneider yeast back from Germany and have it in my yeast bank now. I can get you some if you want.

I never had much luck with culturing yeast from Scheider Weisse bought in the US.

I'm fermenting my first beer with it right now and plan to brew a Hopfenweisse inspired beer soon.

What temperature are you fermenting at with that yeast?
