Fruit Beer

Thu Jun 16, 2011 5:12 am

Planning on brewing 2 fruit beers for the summer, for my first time. Watermelon wheat and a mango pale ale. Most of the forums say ferment in primary, then rack beer over fruit in secondary. I don't do primary, then secondary. I ferment fully in primary. My question is, can I just add the fruit in primary and let it fully ferment? Also. when dealing with fruit, should I treat it like dry hopping? Wait 4-7 day until fermentation is almost complete then add?

Thanks!

I have brewed 2 batches of raspberry wheat using the Oregon Puree. The first time I transferred to secondary onto the puree. The last time I just poured the puree into the primary. If I were to make a third batch, I would just go into primary again. I added the puree when high krausen on the base beer had passed, then just waited until fermentation completed as usual.
