How does Brett behave?

I pitched a package of Brett L into a beer that finished too high for my liking. After several days I am not seeing typical fermentation activity (krausen, air lock activity, etc.). I have not taken a gravity reading.

This is my first time using Brett so I am not sure what I should "see". Also the package was over 6 months old and I had to degas the beer since it was carbonated.

Could the lack of O2 and the age of the package cause a long lag time before I see activity?

You'll need to give it plenty of time. Bret does not ferment as quickly as "normal" yeast and you won't necessarily see activity like you normally see. Check it in another few months to see how it's doing. It took a good six months to drop a stuck Belgian dark strong of mine from about 1.040 to about 1.020 but oh man the results have been worth the wait!
