La Fin Du Monde Yeast

Fri Apr 08, 2011 6:11 am

I just had a La Fin Du Monde last night from Unibrau and it was fantastic. I love the yeast character put of by this belgian Tripel.

Anyone have a clue what yeast they use and its equivalent in Wyeast or Whitelabs?
Pouring - Infidel Porter, Pallino Wit
Fermenting - Till a rustic Saison
On Deck - Abbey Dubbel, Belgian Golden Strong maybe with brett

Love this beer as well. I just brewed a Belgian tripel with FDM in mind.

Problem is that 3864 is a limited rotating release, and Unibroue does filter out their house yeast and uses a different yeast for bottle conditioning
