Possible fermentation problem or paranoia?

Fri Apr 01, 2011 1:29 pm

Sup everyone,

So I brewed a small batch of JZ's Kent's Hollow Leg lasty night. Everything went good. Homebrew shop was out of american wheat so I just used US-05, not my fav but it's what they had. I rehydrated the yeast and pitched half the pack into 72F wort @ 2.5gal. Stuck it in the fridge with the fermwrap at 67-68 and This afternoon still no krausen....seems a little odd to me but shouldn't it have kicked off already or am I just being paranoid? I don't usually use dry yeast so does it have a longer lag time? Thanks guys

I have found rehydrated dry yeast to have a longer lag time than liquid yeast from a starter. I'd give it a little longer before worrying too much.
