WLP 011- European Ale Yeast

I have a 1.063 OG beer that 011 has been working on now for 2.5 weeks. It is still bubbling every 20-30 seconds. Usually after 3 weeks beer is ready to package. I was wondering if anyone knows this yeast well and if this is common for this guy? I was planning on using this cake for an Imperial Stout, but am having second thoughts...

Try warming that yeast up a few degrees more for a few more days. That should help them to finish out. The beer is probably done in terms of gravity reduction though. Why not take a gravity reading and see where you are at. That will give you a better idea as to when and if you can use this yeast again.

I used that yeast for a Bier De Garde a while back. It maintained a 2/min. bubble for almost a month and had a thick pad of yeast still on top. This kept up even with warming up to 72. All my brewing buddies were amazed at how long the yeast "pad" stayed on the beer. We all thought it was contaminated. I did gravity checks on it 3 times in the last week and no movement so we bottled it. Was clean as can be and left a very nice malty charater even with the FG being 1.009. I was worried too so I did not repitch this cake but im sure if yours is clean it would make a real nice yeast for a RIS.

It's done, just gasing out. Rinse the cake before repitching.
