3725-PC Biere de Garde - Anyone try this??

Just picked up a couple smack packs of the Wyeast VSS 3725-PC Bier de Garde with plans on brewing a BdG in a few weeks (using Jamil's recipe from BCS). Has anyone used this yeast? If so, what fermentation temperature did you use and how did the ester profile turn out?

The specs indicate a fermentation temp of 70F - 84F, but that seems a bit hot for this style.

Jamil says start at 66. Increase 1 degree per day to I believe 72 when fermenations starts to slow.

That's for the Euro-Ale yeast. You should try and pay closer attention to the-pod cast. Doesn't help when you are listening at work.

I'm trying wyeast 1007 german ale on a biere ge garde, just pitched this morning. I had some sitting around, and that yeast does wonders for malt. really showcases them. i started at 58 and i plan on ramping up about 2 degrees a day starting sunday or monday. probably get it up to 70 then cold crash. I pulled the yeast off a cali common (which was good but a little off style), that was pulled off an alt (which was very tasty).

A follow up for anyone looking to use this yeast...

Pitched at 65 and let free rise. 24 hours later and the temp is already up to 72! This yeast produces a TON of CO2. I have never seen a steady stream of bubbles coming out of a blow off like this one! It seems very happy in this temp range. Will post tasting notes later.

I don't understand why they even call that strain "Bier de Garde" when it is from Fantome, who is not really producing anything like a classic bier de garde, and it's not going to make a beer like Fantome either since it's just an isolate of their primary strain, no bugs. Not that I'm saying it couldn't make a good bier de garde... I just don't understand why they chose that one to call it that.
