Stuck lager ferment

Fri Feb 25, 2011 3:27 pm

I have a stuck fermentation in my Maibock. I made a 2 liter starter but it has just been slow since I pitched it and is now piddle-dicking around at about 1.033 from 1.070.

What are some options. Can I ramp up the temp or will that give me funky esters? Could I add some suger to wake the yeast up? Is it screwed and my best bet is just to add some brett? If I do add brett can I go ahead and keg it or should I keep it in a carboy?

Thanks

I think you are good to raise it up. How long has it been fermenting? I say wait it out before you go the brett route.

If after you raise it up and it doesn't do anything, make another starter and add it at high krausen

Its has been in the carboy for about three weeks now. I pitched at 44 and it krausened some but not super vigiourus, then after about a week I raised it up to 50 and it did the same thing, kicked up a little and then kind of stalled out, so I raised it to 55 for a week and again it picked up a little but then slowed down after a few days. How high can I raise it without getting bad results?
