Pacman stout?

Hey BN Army,

I am working on a stout recipe- well not so much "working" as "implementing JZ's award-winning oatmeal stout". Here's my question:

Would that recipe work with Pacman yeast? I have a pitch of Pacman I'm using to hone my harvest / rinse / repitch skills. I could go buy some English yeast, but that would probably end up making me delay making this stout for a few months. 

Meh, unless somebody tells me it'd be a terrible idea, I'll probably just do it. I'm told I need to get a feel for yeast performance.

No it's not a terrible idea. I would certainly do it considering you already have the yeast. You won't get some of the esters that the English yeast would give, but in a stout they won't shine through nearly as much as they would in a lighter beer. The thing to watch would be to not overpitch as that would make a clean yeast like pacman ferment even cleaner. Even a "clean" yeast will contribute some esters to a beer that will not be readily apparent. Without those esters, the beer will taste a little lifeless. If you pitch at the right level, you will be fine. The only other thing you will notice is that it may finish out at a slightly lower gravity. For this reason, pacman is my choice for bigger beers.

I like Pacman with a stout, I have a year old imperial stout made with Pacman on tap right now. It's not a oatmeal stout but you should drink some Shakespeare Stout so you can taste how Pacman interacts with the high Lovibond grains.

Just bottled this stuff today. The gravity sample tasted really good. I like it a lot- it's dryer than maybe a normal oatmeal stout, but it's very tasty. I'm loving the big roast flavors in there. Can't wait for it to carb up.
