I have a beer that needs to be put in secondary for about a month on bugs and a few weeks with wood chips. This would be the first time using a keg as secondary and I am concerned about the CO2 pressure and its impact on all of the bugs. Do I need to modify the keg to support an airlock or should I just let it ride in the keg and bleed the pressure every few days?
If CO2 pressure has an effect on bugs, I wouldn't say it is negative. Especially on brett. Just think about Boulevard Saison Brett, or Orval, or any of the other beers bottle conditioned with brett (instead of adding it prior to bottling) and how awesome those brett flavors are.
