Too Cold?

Mon Jan 03, 2011 9:27 pm

I just finished my second batch (Milk Stout) yesterday and put it in the basement not thinking. The room temperature is 53-55F the thermometer on the carboy reads 60F. The airlock is bubbling but doing so a little slow. Should I move the carboy upstairs or go ahead and leave it where it is?

Thanks for the help.

I would move it. Dropping temps will cause a mess of problems (poor attenuation, stuck ferment, it will change your ester profile, etc.).

I got home and was going to move it but the carboy temp was up to 62-63 and bubbling much more and had a huge head (kruizen sp?)

I have the carboy wrapped in a blanket and may leave it there. I will check it again in the morning.

Thanks for the info.

Just watch out that the temp does not drop in the latter phases of fermentation. You might move the fermentor to a warmer area in a day or two to keep the temp up. In the past I have even set it on top of heat register to up the temp in the last bit of fermentation.
