I got a couple vials of 530 I ordered by accident from NB... I only brew a couple times a month and probably won't venture back into the strong ales for a little while... Just wondering if anyone would want one or both... I'll mail them to you... Just don't want them to go to waste!

Nice of you to offer but you don't have to go big. I've brewed 1.040 abbey singles with good results.

Well I tell you what I've been thinking about doing a sweet potato beer for the holidays.... You think that would be ok... Planned on using 80% 2 row, 15% some spec. Malt for some color (120L), and the rest flaked oats...

Sure, now he tells me..... I just bought a vial of the 530 last week. I'm going Belgian crazy! Just made two great Belgians with the 550 and 570, and now a third is on deck with the 530. I probably should have just picked one for all three, but I wasn't really planning on this, it just kind of happened. So anyway.

I love the idea for a sweet potato beer. Go for it!

I'm with dbear. Boil 5 lbs of DME with l.5 lb of turbinado sugar (you should be able to get a 24 oz box of "sugar in the raw" at your local mega-mart), with an ounce of hallertau or other noble hop for an hour or 45 minutes, shooting for 15 or 20 ibu. No steeping grains needed so this can be a relatively quick batch. Just pitch the vials straight, keep the temps in control and I promise you'll end up with a very nice, simple, light, belgian-ish beer.

DM I have a tripel in the fermenter right now and it's seems to be going good... It's on it's 9th day and it's just a few points away from FG... My recipe called for 2lbs of sugar so I dumped in the sugar that Andy Is talking about in the boil.... So I got a little hot alcohol... Should have listened to the brew strong: high gravity series before doing that....

And I think I'll try that Andy... I havnt placed my order for the sweet potato beer yet so I may just add the DME On There too..., y'all got any ideas for hops on a beer like this?!?
