Star San sucked into fermenter

I brewed 10.5 gallons of Jamil's MyBurger today and racked to my Sanke fermenter. Apparently the temperature had dropped a little more after I put in in the refrigerator because approximately 8-10 ozs of regular strength mix of Star San was sucked up out of a mason jar and into the fermenter. :? Am I screwed? I had made up a starter per MrMalty and added oxygen for about 90 seconds after the wort was in the fermenter. Will my yeast survive?

I guess I will find out tomorrow.

Your beer will be fine. The Ph of the wort will neutralize the star-san. At most your wort was thinned out a tiny bit.

Thanks guys, that is very good to hear!! Lesson learned maybe just put a bubbler on until it starts to ferment, that way it can't suck the liquid back in.

Do you really need a blowoff for a lager fermentation? I've never had that vigorous of a krausen, and I would think you ave enough head space .........

Not necessarily for blowoff, but because with the 10-11 gallon ferment, it sometimes just bubbles all the liquid out of the bubbler especially if I use Star San, it just starts to more or less turn to bubbles.

If this is problem for you, then you could always place a piece of sanitized aluminum foil over the top of the carboy during the initial fermentation, then when it starts to slow after 7 days or so, put an airlock on.

Hmmmm, not a bad idea, after all, that is what I do with the yeast starter it self.
