Brewing a lambic tomorrow

So title says it all. I have a bunch of organic red wheat that I would like to use. I know others use flaked wheat like Jamil's recipe. But I was hoping that the red wheat with a cereal mash plus going through the 3 step mashes like jamils recipe says would turn out close enough. What do you think?

I think you would be just fine with that. Just be sure to sparge hot to rinse out maximum starches into the boil. What are you using for yeast/bacteria? Anything commercial or any dregs?

I plan on sparging at 190 like jamil suggests. I am making 10 gallons and splitting them up. One I'll use roselare. The other will be a dregs concoction from about 200 sour beers from our clubs last sour beer fest. We ended up with two full growlers of dregs.

SWEEET! 2 full growlers? Man, I would use the dregs in both beers and split the roselare between the two batches as well! Make it funky brother!

A local professional brewer already brewed his lambic up about a month ago using those dregs. He says that it tastes like a two year lambic already.
