Will my yeast ferment my Berliner Weisse?

Sun Jul 25, 2010 1:59 pm

I brewed my first Berliner Weiss. I decided to give the Lacto a head start. No starter made but I allowed it a 72hr head start before I pitched WLP 011. The Lacto was very active when I pitched my yeast starter. So, I'm wondering if the Lacto will lower the PH too much to allow the yeast to ferment the wort? What should I do if this is the case? Should I pitch another starter or resign to the fact that I need to brew another beer with WLP011 and blend. Thanks!
