Bleu Cheese

I was judging a very informal competition in my community this weekend. One of the brewers brought 3 diffferent beers. All 3 had what I found to be a distinct "bleu cheese" taste in the background although not everyone noted it, so I guess it wasn't dramatic. I've never had this as an off flavor before. What struck me was how recognizable it was.

I've done some quick research and don't know what to say. I'm guessing a wild yeast or maybe even bacterial infection in her brewing equipment. Anyone have any experience with this less-than-desired flavor or any thoughts.

If it was present across three different beers it definitely sounds like there may be some sanitation issues with the brewer. I'm guessing with a cheese character it would probably be some sort of mold? Might go good on a salad :mrgreen:

This off flavor can most likely be attributed to using old, oxidized hops.

+1 or the sanitation. I have a sour mash beer that kinda smells like gorgonzola!! tastes great though :mrgreen:

Like Mylo said, I get that from old hops usually of the noble varieties.
