Open Top Hefe

As seen on episode 4 of Brewing TV, has anyone done an open fermentation on a hefeweizen yet?
Results, thoughts?

You can do things the right way or the wrong way.
Or you can do it MY way...which is like the wrong way, only faster.

I dont know about open, but I do almost all of my beers with just aluminum foil over the top. There is prob about the same pressure on the beer as there would be with an open ferment.

The last hefe I made I used the 3068 and I swear it was better that the WL. But then again, side by side, I wouldn't be able to tell. :)

i do about 4-5 days with only foil, then go to airlock as activity slows down. it's a small thing but i swear my beers are finishing drier. just my opinion.
