It seems to me that most of the krausen might just be CO2 bubbles on the surface. I'm sure there's yeast in there but maybe not as much as with certain ale strains. Have you tried top cropping lager yeast yet I have just started top cropping through a blow off tube with a bit of CO2 back pressure, but am looking for better systems.
