I grabbed my starter and it smelled like vinegar....arrrgghh. I didn't have an WLP001 or S-05, buy I did have Safale S-04, so I pitched it. Didn't have time to rehydrate since I had other things going on.
I lowered my fermentation temp down to 65 from my planned 67 to try to hold off some of the fruitiness from the S-04, but what should I be expecting when this beer is done?
I'm a little pissed since this is my favorite American Brown ever...guess that teaches me not to have spares on hand.
