Starter for a 10 gallon batch

So I'll be brewing my first 10 gallon batch this coming Sunday and as I was planning my brew day, I realized that while I've brewed 10 gallons before, I've never kept all 10 gallons. In the past all 10 gallon batches have been split between a friend and myself.

So, here's the issue. I have 1 2000ml erlenmyer flask and one stir plate. Normally this works great for 5 gallon batches, but probably won't be ideal for a 10 gallon batch. I do also have a pyrex orange topped.....bottle that I can treat like a flask and boil in, cool, everything. So I guess I have 2 flasks, but only one stir plate.

I'm going to be brewing a Sierra Nevada Torpedo clone with an estimated OG of 1.068.

So, how should I deal with this? I'm going to pitch 001.

Should I:

1. Buy 2 vials of 001 and build as big of a starter as I can with them in one flask and eyeball half of that into each 5 gallon carboy?

2. Build a starter in each of the flasks and continually rotate them on and off the stir place for several days before pitching?

3. Build a standard starter in one of the flasks and put it on the stir plate, pitch on brewday then just pitch 2 vials of 001 into the other carboy?

idea # 2 sounds best. Sounds like your going to need a second stir plate

If you have the time you can build a starter with one vial, crash, decant, build it back up and get about 4 vials worth of yeast. Then divide it up by eye at the end.
If you are using wlp001 why not just buy two packets of Saf05 and call it a day?

You could do a stater with wlp001 on the stir plate for one carboy and pitch a packet of US-05 into another carboy. I've done this before and was surprised how close the flavor was.

What's so special about this US-05 stuff? why couldn't I just pitct a vial of 001 into the other carboy?

because you would be underpitching if you only use one vial. a pack of dry yeast (us-05) has sufficient cell count however. check out jamil's yeast calculator.

and saf05 is half the price for a pitchable dose, no brainer for me. saf05/1056/001, I can't really tell the difference but haven't done side by sides, just switch between them here and there. I havent bought a cal/american ale strain in a long long time though due to the quality:price I get from saf05.

According to JZ's pitching rate calc (assuming 75% viability on your vials), you would need three vials to pitch directly into 5 gallons.

I would make a 4 liter starter with 2 vials and use a stainless steel pot with a lid from the kitchen instead of a flask if you stir plate will turn it.

If not, I would make a simple starter (no stir plate) using 8L and 2 vials in a SS pot.
