Low carb beer questions.

I want to create a beer that is ketosis friendly. It needs to be as low as possible in carbohydrates. I have been looking at different recipes in beer tools and have come to a conclusion that the dryer it finishes the lower the carbs. Ive also noticed that even higher gravity beers that finish really low also have relatively low carbs (12-14 per 12oz). For example I made a belgian golden strong ale recently and it finished at 1.001 and had about 12carbs per 12oz. I have also looked at IPAs in general and they have about 30-35 carbs per 12oz. Does anyone know what process "ultra light" type beers use remove these excess carbs? They typically have about 2-3 carbs per 12 oz.

They use enzymes (from Aspergillus) in the mash that completely (or nearly completely) hydrolyze starch into fermentable sugars. Ethanol is, of course, a carbohydrate but I don't think it gets counted as such.

After a little googling it looks like Beano is the best substitute for Aspergillus? If so what quantity are you using per 5g?
