I've been using the Pacman yeast for the last 4 brews.
Lambic base 1
Lambic base 2
APA
Dead Guy clone
The lambics I fermented out and harvested the Pacman before pitching the bugs.
APA from lambic harvest 1.
Dead guy from lambic harvest 2.
I used the Pacman for my APA recipe where I normally use WLP001.
This yeast ferments clean, flocs great, not as dry as wlp001.
Nice yeast, I can see me using this yeast again.

i made the shakespeare stout clone with it and it worked great! poured my vanilla robust porter right on top and it went right to work. love the stuff. will definitely be using it again.

Man I love this yeast! I did the West Coast IPA and split with the 007 and the PacMan...Winner...PACMAN! Then I used the yeast to do a "Janets Brown Ale" Split between 1056 and the PacMan...Winner...Well pretty close but the pacman was much quicker and left a bit richer malt finish than the 1056. Either way I just ordered another pac of the pacman...hope it stays a regular!

I wish I would have split my APA batch 50/50 - 5G gallons with Pacman and 5 gallons with wlp001.
Next time...

Used it on an IPA (with Columbus, Centennial, Cascade)
can't really taste any yeast character under all the hops, and I can't tell anything about how it flocc'd with all the hop particles floating around
but, it made a nice IPA

I used it on the Shakespeare Stout clone, and it was so awsome I tried it in a Pullman Station Brown clone ... it was awsome again!

I'm running a little experiment with my Pack o Pacman.
Split my 1500mL starter between a Cream and Blonde Ale. From there Blonde harvest went to a(Levitation-esque) Amber and Cream went to a Brown.
Sunday I'm taking the Amber harvest to the CYBI Dead Guy clone and the Brown to Tasty's "Janet's Brown Ale".
So far the Amber and the Brown are Dry hopping and carbonating respectively and the Blonde and Cream are being guarded while on tap so I can have enough left to bottle for comp.
I'd have to say just from what I've seen this is one aggressively attenuative yeast. I hit 1.006 with my Cream and even with 158F Mash on the Amber still hit 1.012. It Flocs great, the Blonde and Cream are ultra clear and a nice clean neutral flavor that lets the rest of the ingredients come through prominently. All in all I think I'll grab me some more of the Pacman next time my LHBS gets some.
Cheers!
