Lesser of Two Evils

What is the lesser of two evils:

Fermenting a lager at 58 degrees?
Having a lager start at 58 degrees and then crashing it to 50 after 2 days?

Neither

Can you slowly take the temp down and not crash?

The latter, I suppose. Lagers don't want to be fermented at 58 °F but, even though most of the damage from high temperature fermentation is done in the lag and growth phases, the result has got to be better if at least part of the fermentation is conducted at proper lager temperature.

Yeah, i wish i could've brought it down slowly but instead it just crashed to 50. It's now slowly getting warmer (about a degree every 2-3 days). If i knew ahead of time that there would be 60 degree temps in March in F***ING MAINE then i wouldn't have done a lager. Alas, under-attenuation here i come.

Just wait, I lived in Maine for 5 years and there's no doubt that another blizzard and freezing temps are in your future (its not July yet). Chickadee lager may have something interesting to offer. :mrgreen:
