How long is too long to dry hop....

Mon Dec 07, 2009 4:06 am

So I had 5 gallons of APA sitting on 1-2 oz of dry hops for 2+ weeks before I racked it off (kinda forgot about it last weekend). It got me thinking, how long is too long to let your beer sit on dry hops before the beer starts extracting off flavors? I couldn't taste anything off in my beer when it was racked, but we'll see when its carbonated.

Thanks!

I dry hop my beers in the keg and haven't had any issues. I brew 10 gallon batches and it may be 3-4 months before the second keg is killed. It may be a matter of taste. The Misses and I like lots of hop flavor and aroma. You shouldn't get any "off flavors" from dry hopping. Each hop has it's own flavor/aroma characteristics and you may have to try a few to find one you like. I've had good luck dry hopping with columbus, amarillo, simcoe, summit, and even cluster. 1-2 oz of hops per 5 gallons works good for me, usually 10-20 alpha acid units.

I have had the best results with dry hopping for approximately 7-9 days at most. This is with one hop addition all at once. I have not experimented with dry hopping more than once (removing hops, then adding more). I think it also depends on what temps dry hopping is done at. I have gotten some grassy flavors from dry hopping too long (+2 wks).

the common wisdom is 7 to 10 days with no appreciable gain in the 10 to 15 day range, this could be temperature dependent though. Vinnie goes into detail on dry hopping in the sunday session if you check the archives.
