Great Divide Yeti yeast suggestions

I'm brewing a Yeti clone in Sunday with a friend. It's based on the BYO clone recipe. We're brewing 11+ gallong and are going to split it.

He's going to ferment his with WLP 002 English Ale Yeast and I'm still undecided.

I realize the recipe calls for WLP 001, but I was thinking about using WLP 007 Dry English Ale Yeast.

This batch will be the first I've brewed in a long time and there are several things different with my brewing process that have not been incorporated since the last time I brewed. The main one of these is a fermentation chamber, aka chest freezer to help me control fermentation temps.

OG will be 1.090+ and I was figuring I'd ferment at 66 or so. I'll build my starter Thursday night and I have a stir plate for it.

Is there anything drastically wrong with what I'm planning? Anyone have any other yeast suggestions (White Labs only please)?

The James Bond 007 yeast is my favorite. You'll love the results.

so I built my starter and pitched it into my Yeti clone. Only problem is that the OG was 1.120 rather than the anticipated 1.108. Not a huge difference, but I'm getting worried.

I checked gravity on Sunday (after a week of fermenting) and it was only at 1.058. Expected FG is 1.038.

I'm probably over reacting a bit, but should I just let it sit? Can I honestly expect WLP007 to take a 1.120 beer down to 1.038?

Why didn't you add some water at the end to lower that gravity to a match your target gravity? That would have helped you dry your beer out and helps the yeast do a better job making you great beer. I do not think you'll get below 1.024 unless your mash temp was 142-150. Good luck.

8 plato is 1.036. If you're aiming for 1.038, you're officially fucked. It's going to be waaaaay too dry.
