I brewed a Russian Imperial Stout 4 weeks ago and pitched a healthy starter of WLP099 Super High Gravity Ale Yeast.
The O.G. was around 1.082.
4 weeks in the primary later, there is still activity coming out of the airlock.
I was thinking I would take a gravity reading today, but since it isn't done yet I decided to wait.
Does anyone have experience with this yeast?
I would like to transfer the beer to secondary to free up the bucket for something else, but I don't want to rush it.
How long could it go on?
