insomnia saved my pale ale

Fri Jun 26, 2009 4:53 am

Wednesday night I couldn't sleep worth a shit so I got up at 3:30 to wait for time to go to work. I went out to the brew shed to check my carboys temps and my pale ale was blowing off through the air lock. It was the third day of fermentation. I had stopped using blow off tubes because I started using Fermcap-s three batches ago. It kept the krausen down on my wheat and my amber but the pale ale went crazy. O.G. was 1.052, ferment temp is about 68. I used ten drops of fermcap for the five gallon batch. Any ideas what happened? I was hoping to avoid blow off tubes with the fermcap.

What was your pitch like? a couple of times I've repitched... I know I've overpitched... and it's been a mess once or twice.

My Blonde Ale did the same thing this week. Third day of fermentation, I came home to a big mess, foam control and all. Weird, tastes fine, hopefully it's not infected. The 10 gallons of American Wheat I brewed the same day is behaving nicely.

I did my usual pitch. One pack of rehydrated safale us-o5. I don't why it took off so hard. I've been checking it all the time to change the ice bottles out in my swamp coolers and it looked like a normal krausen. I used Jamil's pale ale with caramel recipe, I don't know if it's the grain bill that would make it foam more or if the fermcap just doesn't work.
