WLP500 vs WLP 540 - and potential disaster?

I just bottled my first testing of two yeasts against each other. I did (approx.) did JZ’s dubbel, 20 L batch (slightly more than 5 gallons) OG was 1.070. Half was fermented with WLP500 (trappist), the other half with WLP540 (abbey IV); pitched a 1000 ml starter in each. Fermentation temperature the first 5 days was 22 C (72 F), the last 3 days 24 C (75 F).

And here’s the thing. FG on the WLP500 batch was 1.010. Just as expected. FG on the WLP540 batch was 1.026. That was not expected. Any suggestions what might cause this difference?

And perhaps the most important question. I bottled both with sugar. Should I pour out the WLP540 bottles immediately in fear of bottle bombs? When I open them they are very manly, there’s beer everywhere. Should I take this as a sign of carbonation getting out of hands, or is it just because it is actively fermenting?

It sounds like you should have left the WLP540 go a little longer. Yeast works at its own schedule - not yours... :) Provided that they don't gush - you could try to re-cap them. Maybe a few times to bleed the excess pressure off them.
