I use the wet towel thing at the moment to keep my temp where I want it, but I once had a robust porter free rise to 81F without any temp control... it was a 1076 beer that was nearly finished in two-three days. With a wet towel and frequent monitoring, I'm able to keep it in the mid 60s pretty easily. But if you have fridge access, certainly look into a controller. As far as a lead on on, I don't have anything better to check with the sponsors.

Do you have a place in your home that keeps a fairly stable temp?

I have a 3 part system that's fairly cheap and keeps fermentation temp about 4-6 degrees below ambient (ferm is usually a couple degrees above ambient when it's active). I still use it when I want to ferment 2 beers but my ferm fridge is tied up.

1) put the bucket/carboy in a shallow container than can hold about an inch or 2 of water. fill it with water

2) put a wet t-shirt over the bucket or carboy

3) put a fan on to blow it

It'll work by evaporative cooling. The fan will speed up evaporation, making it cool harder faster, but evaporate more. Putting the shirt in a puddle of liquid will alow it to wick up more water to evaporate off, so it doesn't dry out. You can adjust the fan speed to the approximate cooling needed. If you only need about a 2 degree drop to get fermentation below 70 *say if your room temp is already below 70), you may not even need the fan.

Spider did you odd flavors on that stout? Fusels?
Also I've found that one of my interior closest is pretty temp consistent.., I will try the wet tshirt thing my next batch! Maybe Santa will bring me a temp controller :}
BTW do any of you guys have a tasty IPA or APA recipe ( extract ) y'all wanna share? I've been doing all grain but I just wanna take a break and just boil some water for a change! I have no prob doing a mini mash tho.. Thanks!

It's possible (*probable) that there are fusels in there, but I don't have a refined enough palate to pick them up under the smoke...

Also I never saw high krausen on this beer... Could I have missed it in te quick fermentation?
