Are you saying it's a bad enzyme? Villainous perhaps? The enzyme lacks moral fiber? Or maybe it tastes disgusting. I'm not sure how an enzyme could be vile...

Any observations?

This morning I checked my Pale Ale that I pitched last night and just about freaked out when I saw how it was fermenting. Instead of a cloudy turmoil of yeast moving all around, the beer looks still with pillowous clouds of ?? floating around. I then remembered that I added a vial of "Clarity Ferm" that I received at NHC. The fermentation at this point looks totally different than usual, although it still has a small krausen and is bubbling away.

Anyone else use this product yet?

Well, the beer tastes great and it sitting in a keg waiting for me to get back home from a trip. I really need to do a side by side comparison with another batch to see the difference and so I"ll be brewing the same beer again next week, same yeast same temps just no enzyme addition. We'll see that happens!

Clarity Ferm sounds interesting, I'd rather use this sort of solution than PVPP or Silica Gel... I only hope that one of these days someone releases Maturex in homebrewer sized packages... no more diacetyl problems for anyone.

just try and google: maturex ............. not when the wife is in the room at the very least!

Does anyone know more about Clarity Ferm and gluten? The session referred to Charlie Papazian's experiment where he used Brewer's Clarex during fermentation and the beer resulted in 5 ppm of gluten. I am gluten sensitive and am looking for ways to reduce gluten in my beer.

Is Clarity Ferm genetically modified (GMO) like Brewer's Clarex? Is anyone else concerned about using GMO enzymes in their homebrew?

From the session show, with white labs Clarity-ferm sounds just like BEANO, The only thing that could be different is the dilution ratio. I have use Beano but it was for a very specific problem. I would be worried about getting very thined out beer if using to much Clarity-ferm.
