I think I'm just going to use a sanke keg for my 10g batches that I want to ferment all together. I am hoping 5.5g of headspace should be enough to avoid blowoffs.

The APA is fermenting great, it's just not shooting out of the airlock like the IPA.

The IPA was mashed at 149 F and the APA at 152 F.

For the starters I made a batch of wort and then split it between two mason jars and then pitched a vile into each and let them sit for 24 hours on top of my fermentation cabinet (freezer with temp controller).

Well...Who knows...maybe three degrees was enough to make one batch more fermentable than the other?

Absolutely!

a 149° mash makes my kraeusen blow off the top. You get more fermentable sugars there converted from the beta amylase enzyne activity. 152° still gives me a very active fermentation but I've never blown off from a 152° personally.
