I split the 11 gallons of BDS I had into 2 carboys last night. Gravity is still 1.019 but it tastes pretty good as is. I'm sure once it's packaged it won't be dry enough though. I added Brett B and L to one carboy and will let the other one sit until the bugfarm sour blonde is ready to be bottled in April. I will pull a sample of the virgin BDS and force carb it to see what it's like before adding the bugfarm from the blonde. I much preferred the smell of the empty Brett L vial compared to the B. The B was very Orvalish and the L was less intense and more lactic like. Hopefully they play nice together.

Fermenting: Cider, Azacca Oat Pils, Egregious-ish, Lambic, Carrot Blossom Cedar Mead, Brett Helles
Drinking: RIS, Doppelbock, Sauerkraut Gose, Lambic, Brett Blonde, Kriek, Saison, Rye Berliner
Barrel aged: RIS, Rye Barleywine, Tripel

Checked the BDS after almost 2 weeks and only dropped 2 gravity points (from 1.030 to 1.028). Fuck it, I'm done working with this beer. Will pitch Brett L. with a 1L starter and wait a year.

I'll let you know how it tastes in FEB 2012. If I'm waiting a year, it better taste like Lindsay Lohan's vagina, or I'll be seriously pissed!!!

Elbone, brilliant photo! I feel safer already. I just moved into kegging and have many things that need to be moved. I have been pulling the pressure relief valve to let co2 escape but I really like the no brainer solution that you displayed. Kudos to you and I feel like a bonehead for not thinking of it myself! :jnj

Not a big fan of the WL brett vials as they do provide much less yeast than Wyeast brett packs do. Either way, they do not need a starter but some time will prove it worthy. You should not have to wait a year, but I would bet within six mos you will see a significant drop in gravity and you could start enjoying it then. If its any consellation, I am finally drinking my first flanders red that was 18 mos old at time of packaging. You talk about waiting for a beer! I am very pleased with my first stab at the style even if it did take a year and a half!
