My stick on 'fermometer' and my digital temp controller have about a 2 degree variance when I do this though.

Tests have shown a 0.5 degree difference between a probe taped to the side of a glass carboy at liquid level and the center of the wort's mass.

Definitely not the same as a stick on tape.

Thanks for chiming in, Pope.

I understand the logic behind just taping it on the side -- it definitely makes sense. I just wanted to confirm there wasn't something I was missing about if someone was willing to go the extra step and use a thermowell.

I haven't read the article explaining the difference in temperature myself, but I wonder if using a fermwrap changes the temperature of the glass quicker than it does the wort. You'd figure that the solid mass of the glass would conduct the heat faster when in direct contact with the heatwrap than would the wort.

Either way, if the Pope can win two Ninkasi's with taping it to the side, that's reason enough for me to adopt the same method.
