I'm brewing a Yeti clone in Sunday with a friend. It's based on the BYO clone recipe. We're brewing 11+ gallong and are going to split it.
He's going to ferment his with WLP 002 English Ale Yeast and I'm still undecided.
I realize the recipe calls for WLP 001, but I was thinking about using WLP 007 Dry English Ale Yeast.
This batch will be the first I've brewed in a long time and there are several things different with my brewing process that have not been incorporated since the last time I brewed. The main one of these is a fermentation chamber, aka chest freezer to help me control fermentation temps.
OG will be 1.090+ and I was figuring I'd ferment at 66 or so. I'll build my starter Thursday night and I have a stir plate for it.
Is there anything drastically wrong with what I'm planning? Anyone have any other yeast suggestions (White Labs only please)?
