WLP810 San Francisco (Anchor Steam) Lager Yeast

Fri Nov 14, 2008 10:08 am

Has anyone used this?

I am going to brew a blonde ale this weekend. I brewed a batch this summer when my basement was warmer and I used WLP008 East Coast and it came out fantastic.

My basement is a lot colder now. A jug of water maintains a temperature between 58 and 60 which appears to be perfect for the 810 yeast.

Any words of wisdom? And.. just what IS a "lager" characteristic as it relates to flavor?

I like WLP810 for a wide range of malty beers. I find it mutes the hops on hop oriented styles. It's pretty robust, can spend some time in the fridge and still start right back up again weeks later. It seems to finish out just fine all by itself without rousing or temp boosting and still clears very well all by itself without gelatin or filtering or anything.

When it shares my fermenting box with a lager (50F) I wrap the WLP810 bucket with a heating pad on low and a foam camping pad. that keeps the WLP810 at about 62F. With ales I just let it ride at whatever the ales are doing, typically upper 60s. It does not seem to throw a lot of fruitiness at either end of the range.

Thanks for the great information Danny. I feel much more comfortable using this yeast now.

You should put that review on the White Labs site. No one has reviewed the WLP810 strain. I know customer reviews can be sketchy but I like to read them anyway.

Thanks again,

Gott'er Brewed! It is sitting in the basement at a reasonable 62F. I expect it to drop to 58-60 when the fermentation slows.

Even though this is probably a wheat beer I am calling it a California Blonde:
6.5 American Two-Row
6.5 American Wheat
0.25 Aciduated(sp?) Malt
2.4 oz Willamette Hops
WLP810 S.F. California Common Lager

Should be good!

I am currently making a starter with the #810, but I think it smells a little farty. To speed up the budding I have on purpose put the starter inside the livingroom where theres nice and warm - some 69F/21C. Is it suppose to have that farty aroma or is my yeast contaminated?
The yeast is in a quart LME 1.035 starter for it with some First Gold hops IBU's.
