I wait until the end and use a refractometer. If I have a beer that the ferment seems to be limping along I may take one in progress but usually would rather not disturb the beer. Thankfully it has been a long time since I have had a poor ferment. All thanks to the BN!

Almost always. I'll also do a force ferment on my post boil hydrometer sample by adding a small amount of yeast and ferment at room temp with a foil cover.

It's usually done in a day or two and you'll know about what your FG should be.

i'll do a gravity test usually towards the end of fermentation just to make sure everything is going to plan, and its a good excuse to drink a little bit out of the hydrometer tube just as a bit of quality control.

I take a hydrometer reading after a week. Note the reading, put saran wrap over it and place it next to the fermenter. Check it again every 2 days or so. It usually tracks with the beer and winds up at the same final gravity.

Fermenting: Cider, Azacca Oat Pils, Egregious-ish, Lambic, Carrot Blossom Cedar Mead, Brett Helles
Drinking: RIS, Doppelbock, Sauerkraut Gose, Lambic, Brett Blonde, Kriek, Saison, Rye Berliner
Barrel aged: RIS, Rye Barleywine, Tripel
