Super Quick Fermentation?!?!?!?

Wed Apr 13, 2011 10:56 am

Need advice/help to quell my paranoia about a fermentation going on with a Belgian Wit please.

Used WLP 400, started bubbling within 16 hours, bubbled vigorously for about 24 hours and now it appears to have shut down. I have not taken a gravity reading as of yet. Have read that this can happen, but still sh**ing a brick. Fermenting at 67 degrees. Used 5lbs Belgian Pils 2 row & 4.5 lbs flaked wheat in single infusion mash. Perhaps did not sparge enough off?

Should I repitch in to secondary, do a stir, relax & chill out?

Any input appreciated.

Cheers,
Bird

I have actually been doing a little research myself into WLP 400 lately. This yeast has a reputation for slowing down to a near halt and starting back up again. When it starts to stall, you want to rouse the fermentor and get the yest back into suspension and working again. This should get the fermentation started again.

If you read through the reviews of this yeast on White Labs WLP 400 page you will see several mentions of the phenomenon.

Hope this sets your mind at ease.

That being said, a gravity reading is always helpful in such a situation. As you will see with this yeast especially, you will not be able to rely on visible signals to determine that you have reached final gravity.

+1
Never rely soley on site. Get a reading everytime. If you want to be able to reproduce a beer that you have made, it is imperative that you get a reading.
Relax and have a brew. :jnj

Many thanks for the info. Will get a rouse going and post on the findings. Just seemed so bizarre that it shut down so quickly.
Cheers!
And yes had a few brews to relax.

Reading taken-1.013 from an Original of 1.043. That was taken 5 days ago-still getting a certain, let's say in the word of Zappa, "stinkfoot" odor. Took a taste & it tastes good.
Time to draw to secondary?
Or let it rest for a few more days in primary?
