White Labs Brett L "shaken out"?

Mon Apr 18, 2011 11:29 am

I had a BPA (brewed in Nov) with Brett L (White Labs) in secondary for about a month or 2 around mid 60's. As I was driving it to a basement for longer storage the car reeked unmistakably of brett (kinda neat actually...). A couple more months passed in secondary. It has now been bottled for a couple weeks and no brett aroma at all. The taste can easily be overlooked- if there at all. Is it possible the brett was "shaken out" of the carboy, kind of the same way hop aroma can be fermented-scrubbed out of a beer? Has anyone else had any experiences like this??? Just curious.

I could be mistaken but I don't think Brett flavors and aromas are all that volatile. You may have smelt stronger brett aromas because of the fermentation pushing those into your car i don't think that means that it will be strong in the finished product.
