Just picked up a couple smack packs of the Wyeast VSS 3725-PC Bier de Garde with plans on brewing a BdG in a few weeks (using Jamil's recipe from BCS). Has anyone used this yeast? If so, what fermentation temperature did you use and how did the ester profile turn out?
The specs indicate a fermentation temp of 70F - 84F, but that seems a bit hot for this style.
