I think you are over thinking the problem. No need to try and control one at 66 and one at 68. Set your temp to 67 for both. The difference will not be noticeable.

When having lots of beer going at once you need to plan what beers you are going to do based on the resources you have. If doing 2 ales, then plan 2 ales that ferment around the same temp range. The problem would come in trying to do an ale and a lager. You simply can't without additional resources.

Yeah the analog controller absolutely can be modified to heat. I just did this for a saison, worked great.
