i was at ebenezers last weekend and got a chance to try a 1983 de dolle oerbier. i was told this bad boy was fermented with the rodenbach yeast and after tasting it i believe it! this beer was fantastic. so right after we pured it i put the cover back on it and took it home and stuck it the fridge. so my question to you guys is what is the odds of me getting any viable yeast out of this 28 year old bottle? i know i would be getting all kinds of other bugs as well but i think it would be great for a flemish red (obviously). that and i don't have a good lab set up yet and havnt done this befor. should i hand of the bottle to someone who has more experiance at this? what do you guys think.
