Legged and drinking in two weeks?

Sun Mar 13, 2011 9:40 am

Hey guys,

So I brewed a stout last weekend and primary fermentation went well, my gravity was right where it is supposed to be so I transferred to secondary yesterday. It,s looking great and also tastes fantastic already. I have friends coming into town next weekend and I'd like to force carbonate and start drinking it then... I know it's early (2 weeks from boil to keg) but do you guys ever drink a beer this soon after brewing it?

Yeah I've done it before but I'm not sure on a stout... I've got a stout that tasted great in the fermenter but I couldn't drink it from the bottle until after a couple months... Hell try it anyways though, worst case, you buy some back up beer and let that dude sit in the keg until they come over again!
That could be cool for them to try it now and if they come back in 6 months or a year let them try it again.

I have recently started using gelatin at kegging. Not sure how clear it gets the beer, but so far I can definitely say that the beer is drinkable much, much sooner. Usually I start drinking a beer about a week after kegging, but it tastes much better after an aditional week or two. With gelatin, the beer doesn't seem to get better with the additional weeks, and has achieved that drinkability without waiting.
